Abstract
The analysis of food consumption by economists remains limited. An interdisciplinary approach would certainly be more appropriate to understand food consuming habits. A study in progress on wine consumption although it has been carried out by economists alone, has tried to bring out the various elements of this consumption, which seems declining on the whole. Its structure in terms of space, time, family group, circumstances, has enabled to oppose a « functional- profile» (daily consumption with meals, to quench thirst) and a « pleasure-profile » (occasional consumption, with a convivial character). Thus, the dynamics of consumption in France seems on the whole to build up through the relative evolution of consumer groups in regard to these two profiles.
