Abstract

Objective: to evaluate the high nutritional value of Leucaena leucocephala and Moringa oleifera to be used as a source of protein to produce protein concentrates, isolates or hydrolysates.Design/methodology/approach: A search of the bioactive peptides obtained through Leucaena leucocephala and Moringa oleifera was carried out in different databases such as Scopus, Elsevier, NCBI, among others.Results: The different studies carried out provide information that suggests that they can give rise to fragments susceptible to the release of peptides with various activities, which could be an appropriate strategy to produce bioactive peptides with bio-functional activity. However, further research is required on the characteristics of the fragments released to determine the mechanisms and properties of the sequences responsible for the various activities.Study limitations/implications: The study of the peptides obtained through L. leucocephala and M. oleifera, so far is limited, so it is necessary to implement methodologies for obtaining, purification and application in food matrices.Findings/conclusions: According to the literature, the peptides have been shown to exercise biological and functional activities, in the organism and food matrices respectively. The biological activities that they can present are antioxidant, antihypertensive, anti-cancer, immunomodulatory.
