Abstract

Differentiated and specialty coffees have developed great expectations for those who produce them, and as a different product from those who demand it. A special coffee is a toasted grain which from its care and processing provides a cup of clean flavors and with organoleptic nuances or notes that make it a beverage that is enjoyed in any preparation. The objective of this study was to understand the characteristics that define family agribusinesses (FA) as success cases in differentiated and specialty coffee in the region of the high mountains of Veracruz, México. Three types of diagnoses were applied: of the coffee plantation productive structure, entrepreneurial, and of the businessman’s profile. The results indicate that the six FAs of differentiated and specialty coffees are characterized by developing advancements in the productive chain from sowing to added value, and innovating in processes and products.
