Abstract
Excerpts from the Preface: The output of the ice cream industry of the United States is now worth more than $400,000,000 annually. The trade in this commodity has increased rapidly in recent years and has become an important part of the dairy industry. With the increase in the consumption of ice cream has come also an increased number of problems to the ice cream manufacturer. The research work now being carried on in connection with these problems and the fact that the literature on ice cream is widely scattered, much of it in publications which are not indexed, have emphasized the need of a bibliography on the subject. In the following classified list of ice cream literature, compiled by Carrie B. Sherfy, Librarian of the Bureau of Dairy Industry, and her assistant, Nell W. Smallwood, an attempt has been made to bring together in a systematic way selected references from all literature dealing with ice cream and ices issued up to and including the year 1926, in so far as this material is available.
