Abstract

Total demand for beef has declined during the 1980's, but demand for the higher valued cuts has increased relative to the average. Price ratios of retail and wholesale cuts to the carcass composite price were used to develop trends in demand for individual cuts. Increased demand for higher quality is clear; demand for convenience (steak or ground beef versus roasts) was indicated. Demand for some cuts vary among seasons.
