In Burgundy the distribution of population and industrial activities is very uneven. These are concentrated along the valleys, e.g. the Saône Valley, whereas the central rural region is threatened by desertification. Using food- processing industry as an example, it appears that industry is denser and more stable in "cantons" whose chief town has a population of under 10 000. There is a close relationship between industrial activity and demography.
