From 1850 to 1870, the meat consumption increased here more rapidly than the urban population though it still characterized some social classes. From 1870 to 1914, the meat buying power grew on for all workers in great industry, mostly, and more, proportionally speaking, for the lesfs favoured of them. Between the two world wars, the most urban families still lived on small quantities and bought lower quality pieces. After 1950, the return to normal has led more and more numerous customers to show identical demands.
