This report is a description of the more important types of equipment and facilities in the major steps of lard processing, and a discussion of the problem of rancidity. The report has a twofold purpose. It attempts, first, to show, while describing a technique, the ways in which the final market product may be affected, and, second, to provide groundwork for further study of the comparative economics of different types of lard-processing plants.
