Abstract

An ERS researcher collaborated with international scientists in estimating the global incidence and health effects—or burden—of 13 foodborne diseases caused by consumption of one of 8 animal-source foods (meats, fish, dairy products, and eggs). The researchers found that the foodborne disease burden attributed to consumption of animal foods was over twice as high in sub-Saharan Africa as in other global subregions.
