Panels were held at three white-tablecloth restaurants across the United States, featuring sample entrées of Delacata catfish along with sample entrées of other species of mild-tasting, white-fleshed fish. Results suggest that Delacata catfish may fare well in terms of search and experience attributes such as taste and texture, across all locations, but may face labeling challenges in certain locations. This study provides willingness-to-pay estimates and discusses possible marketing strategies to further increase market potential for the US fish industry. 000250001 650__ $$aDemand and Price Analysis 000250001 650__ $$aFood Consumption/Nutrition/Food Safety 000250001 6531_ $$acatfish 000250001 6531_ $$achoice experiment 000250001 6531_ $$aconditional logit 000250001 6531_ $$ataste panel 000250001 6531_ $$awillingness to pay 000250001 700__ $$aPerolia, Daniel R. 000250001 700__ $$aCollart, Alba J. 000250001 700__ $$aYehouenou, Lauriane 000250001 773__ $$q84$$o100$$tJournal of Food Distribution Research$$j47$$k3$$dNovember 2016 000250001 8564_ $$9c92fb2bb-6a60-4fcf-9f67-09eed315dc1d$$s421228$$uhttps://ageconsearch.umn.edu/record/250001/files/6-Petrolia-Collart-Yehouenou.pdf 000250001 887__ $$ahttp://purl.umn.edu/250001 000250001 909CO $$ooai:ageconsearch.umn.edu:250001$$pGLOBAL_SET 000250001 912__ $$nSubmitted by Greta Thormodson (thorm018@umn.edu) on 2016-11-30T19:42:21Z No. of bitstreams: 1 6-Petrolia-Collart-Yehouenou.pdf: 421228 bytes, checksum: 4615e67095fe0aa6ba8af6c17ddda646 (MD5) 000250001 912__ $$nMade available in DSpace on 2016-11-30T19:42:21Z (GMT).
