PRICE FORMATION AND FOOD SAFETY IN U.S. MEAT DEMAND: A SEMI-FLEXIBLE NORMALIZED QUADRATIC INVERSE DEMAND SYSTEM

This paper examines the impact of publicized food safety information on consumer price formation of meat (beef, pork, and poultry) and price flexibilities of the meat types. Preliminary analysis indicates that seasonal impact on meat price and some lagged food safety concerns are significant, while contemporaneous food safety concerns are not.
