KONSTRUKCIA MODELOV DOPYTU A SVANTIFIKACIA FAKTOROV VPLYVU NA SPOTREBU HOVADZIEHO MASA V SLOVENSKEJ REPUBLIKE

The work analyses beef consumption in the Slovak Republic. For beef demand forecasting, panel data and the method of fixed effects were applied, the database of the Slovak Statistical Office in Bratislava being used as a background base. A suppporting part were the data presented in the publications „Income, Expenses and Consumption of Private Households in the Slovak Republic", which analyse statistics of family accounts. Used data cover the period 1993-2005. The coefficients of direct price elasticity of beef demand, income elasticity and cross price elasticity are -0.47, 0.91 and 0.8, respectively, there being a substitution relationship between beef and pork. Beef consumption was found to be significantly affected by cattle disease BSE (bovine spongiform encephalopathy). Demand for this meat in Slovakia has decreased by 35%. There was a decline of 10% in beef consumption in the period being investigated.
