Given the increased prominence of FAFH over the past 35 years, some policymakers and health advocates seek to further regulate this market. This policy approach is only as strong as its expected impact. Using an individual fixed effects approach, we first document how FAFH (both fast food and restaurants) has had a relatively stable negative impact on dietary quality over 1977-2010. Yet, overall levels of dietary quality have increased over 20% during this period. To this end, we use an Oaxaca-Blinder decomposition approach to understand how changes in FAFH choices and observable characteristics of individuals have impacted the trajectory of dietary improvements. We find that increased consumption of FAFH plays a very small role in explaining changes in dietary quality (about 4%) as compared to changes in demographics (e.g., age and race/ethnicity -- about 5%) and human capital (e.g., education -- about 7.5%). We attribute the substantial residual, or unexplained, improvement to changes in unobservable factors (e.g., consumer preferences, the food environment, and overlapping nutrition policy initiatives). 000205770 546__ $$aEnglish 000205770 650__ $$aAgricultural and Food Policy 000205770 650__ $$aConsumer/Household Economics 000205770 650__ $$aHealth Economics and Policy 000205770 6531_ $$adietary quality 000205770 6531_ $$aOaxaca-Blinder decomposition 000205770 6531_ $$afixed effects 000205770 700__ $$aSmith, Travis A. 000205770 700__ $$aLin, Biing-Hwan 000205770 700__ $$aCoats, Ellen 000205770 773__ $$d2015 000205770 8564_ $$9d9409ce7-09c0-41f2-9e5a-4c497ae90900$$s353646$$uhttps://ageconsearch.umn.edu/record/205770/files/FoodSourcesDiets_TS.pdf 000205770 887__ $$ahttp://purl.umn.edu/205770 000205770 909CO $$ooai:ageconsearch.umn.edu:205770$$pGLOBAL_SET 000205770 912__ $$nSubmitted by Travis Smith (tasmith@uga.edu) on 2015-05-28T01:18:30Z No. of bitstreams: 1 FoodSourcesDiets_TS.pdf: 353646 bytes, checksum: f1c88a8f7797a3e44ce82175e5672847 (MD5) 000205770 912__ $$nMade available in DSpace on 2015-05-28T01:18:30Z (GMT).
