Abstract

The article presents the situation in the production and processing of milk in the years 2004-2012. A comparison of changes in the production and processing of dairy products that have taken place during the period. In the years 2004-2012 the Polish dairy progressed structural change in the production, processing and consumption. There was a reduction in the number of farms and cows, dairies, respectively, 48, 8 and 33%. The other hand significant improvement sector efficiency, based on 1 employee in 2012 was 791 thousand. zł and it was more than twice higher score than in the comparable 2004.
