Abstract

Beekeeping is an activity of great socioeconomic importance in Mexico, since 80% of beekeepers are resource-poor farmers; it is among the top three of the livestock subsector and is a source of foreign exchange activity, over the 80% of the production from 59.00 tons approximately, is exported. Mexican Honey is widely known for its high quality, however, due to improper use of certain medications such as antibiotics and sulfa drugs, used to control bee diseases, may become contaminated resulting in quality problems that limit international marketing, leading to the rejection of shipments of honey. International quality standards are becoming more demanding with regard to the residual concentration of these compounds in high-quality honey. The aim of this study is to evaluate the effect of time and storage temperature on the degradation of antibiotics in honey.
